One of my favorite things about Joshua getting older is starting new traditions and celebrating the holidays as a family. Since he’s starting to understand his surroundings and abilities more, these moments have become so magical to us; watching him tear apart Christmas wrapping paper, eating his first Valentine’s Day chocolate, or opening up easter eggs in awe of the hidden surprise, Joshua is loving the start of these traditions, and Mathieu and I couldn’t be more excited to do more.
This year, in trying to make all of these holidays and traditions easier to create (cause let’s be honest, who would rather spend their day cooking and cleaning instead of being present with their family), we started incorporating our Vitamix blender in all that we did. To say this addition cut our cooking, cleaning, and creating time in half would be an understatement, and we are officially obsessed! Need a pick me up smoothie? Some vegan pancakes? Delicious cookies? Gourmet soups, or homemade nut butter for that toast? This baby does it all, and it has become my best best friend (sorry hubby).
With mama’s day just around the corner we thought we’d share our take on one of our favourite recipes for a fun morning. This delicious twist on a morning smoothie is the perfect surprise for mom’s breakfast in bed and the best part is how family friendly it is (even Joshua is an incredible help in making it!)
Mama’s Day Pink Smoothie Bowl
For the Smoothie :
3c Diced Watermelon
1c Frozen Strawberries
1/2 Frozen Banana
1/2 c Frozen Raspberries
1/2 c Avocado
2 Pitted Medjool Dates (or 2 teaspoons pure maple syrup) (1/4 c dairy free milk for thinner consistency)
For Toppings:
Diced Kiwi
Diced Bananas
Diced Mangos
Diced Strawberries
Chia & Flax Seeds
Halved Fig
- In your Vitamix Blender, add watermelon on low-medium speed until watery.
- Add frozen strawberries, frozen banana, frozen raspberries and avocado and blend until smooth. (Use the tamper to help it blend)
- Add dates or maple syrup to desired sweetness and then blend.
- Pour the smoothie into a shallow bowl.
- Add toppings with kids (it’ll be their favorite part!) and create something special for mom!
(And if you’re using the Vitamix A2500 Ascent Series Blender like we are, all you have to do is add all the ingredients at once and turn it on the smoothie bowl program. It will pulse low for 10 seconds and then turn up automatically for the frozen items. These programs are my favorite part of this machine and it comes out perfect every.single.time.)
