One of the hardest things about being a mama is the lack of time you have for anything else except your baby. In the last year I have seriously cracked down on time in the kitchen and the only thing that works for my schedule are meals under 20 minutes (max)! So here’s one of my favorite salads, filled with spinach that will help rid dark circles, almonds for extra energy, blueberries for antioxidants, apples for that Vitamin C collagen boost – and guys seriously, it’s DELICIOUS! (And bonus, the serving for the dressing lasts 6-7 salads in the fridge)
Recipe :
Dressing:
- 1/4 cup extra-virgin olive oil
- 2 teaspoons apple cider vinegar
- 1 tbsp. maple syrup
- 1 tbsp. dijon mustard
- Salt and ground black pepper
Salad: (per one adult serving)*
- 3 handfuls of baby spinach or baby kale
- 1 handful blueberries
- 1 handful almonds
- 1/2 gala apple sliced
- 1/4 cup sliced sweet onion
- 1/4 cranberries or goji berries
In medium bowl mixed together spinach, blueberries, apples, sweet onions. Drizzle with mixed dressing and top with cranberries and almonds.
