We make these cookies a couple times a week (I know I know, it’s a problem), but we’re always craving a sweet snack before bed and these are a great way to try and keep things a little more healthy. They’re so easy to make, fast, and absolutely delicious!
4 extra rip bananas (very brown)
2 cups rolled oats
1/2 cup chocolate chips
2 tbsp milled flax seed (optional)
• Add all ingredients to a large bowl
• Mix with spoon and then use hands to squeeze banana + dry ingredients together for 1-2 minutes (I find this is the best method to make sure cookies are moist)
• Mixture should be very slimy and stick to your fingers, if not add 1/2 ripe banana at a time.
• Add small balls to lined cookie sheet 1 inch apart and use a cold spoon to push down until they’re half an inch thick
• Bake at 350f for 11 mins
